Tracy Lee - Accounts Assistant
How did you get into coffee?
I got into Coffee because of my partner David Beattie. I agreed to meet up with him for a coffee ten years ago and the rest is history. I've lived and breathed coffee ever since!
What is it that you like about coffee specifically?
Apart from loving the taste and smell of coffee. I love how complex coffee can be. A slight change in roasting profile or how it's processed can alter the taste completely. I love seeing how the coffee industry changes over time too… things are moving at such an incredible pace, and for all of the right reasons too!
What is your favourite coffee origin, and why?
My favourite coffee is a solid washed central American coffee – I have been drinking El Salvador Bosque Lya for years… it’s a farm we have sourced from since the start, and it is as good now as it was then!
Washed or Natural?
Washed – naturally…
How do you drink yours?
Pour over at home, and oat flat white when I am out and about.
What is your proudest achievement in coffee?
Proudest achievement in coffee is watching Rounton Coffee grow and being a part of it from the start. We started selling at farmers markets at weekends. Those were really tough times, I'm so proud of what has been achieved, and just happy to be part of the business.
If you were not working in coffee, what would you be doing?
If I wasn't working in coffee I would probably be working in customer service with a side hustle creative business on Etsy.
If you could change one thing in the coffee industry, what would that be?
I think the coffee industry is evolving nicely, businesses certainly in the UK are becoming more and more accountable for their impacts, and their actions. I think this evolution needs to be accelerated though, there is a lot of damage being done around the world, and we have an opportunity to try and reduce or limit this impact.
What do you do away from coffee?
When I'm not listening to David talking about coffee I like to run and keep fit, read and relax (preferably in a hot country with our family).
I also love art and live music, so anything with abit of culture to expand the mind.
