Nestled high in the mountains of the central highlands of the country in the district of Ermera, conditions are ideal for coffee harvesting with warm, blue skies during the day and cool evenings at night allowing for consistent growing and processing conditions.

Bright & Spiced
We pick up on bright, tangerine-like notes, with a delicate nutmeg spice. Expect a silky body, with lots of complexity and an evolving set of tastes as it cools.
Washed
Ripe coffee cherries are picked, and sorted to remove any defects. They then pass through a depulper, where the felsh of the cherry is removed, leaving behind a sticky mucilage layer. Next, the beans are fermented, and the mucilage layer breaks down, leaving a clean coffee bean behind. The beans are then carefully dried, resulting in a clean-tasting coffee with natural sweetness and complexity.

Fruity Intensity
Rotutu has an almost sparkling acidity, making this an exciting, lively coffee. With the slight spiced notes in the background, there is also a great balance, to make for a spectacular filter coffee.
