Midnight Harvest is a synthesis of drinks - coffee and Speyside whisky. We have barrel-aged natural green beans from Fazenda Pinhal in a Speyside whisky barrel for two weeks.

The natural Brazilian beans from Fazenda Pinhal work perfectly with the flavours and aromas imparted from the whisky barrel. The result is rich and complex. Apple brandy, nutmeg, apricots, vanilla, and a creamy chocolate finish.

Potentially not a cup of coffee to kick off your day, but definitely a cup of coffee with a kick. As well as being a uniquely delicious, you may also want to use Midnight Harvest in your recipes (tiramisu, coffee and walnut cake, coffee marinades, etc).

Bold & Boozy

Unmistakably unique, with green apple and sweet spice notes from the barrel and chocolate and fruit from the coffee. Perhaps not a morning coffee, although you do you, it is definitely an after-dinner brew accompanied by or perhaps in your favourite dessert.

Barrel-aged

Prior to roasting, we age the coffee in a Speyside whisky barrel, where it soaks up all of the flavours and aromas left behind in the wood. We tend to choose a low altitude coffee for Midnight Harvest, as they are more porous. This helps it to taste even more delicious once it's out of its barrel.

What is barrel aged coffee?

Back in November 2020, we conceived the idea of barrel ageing some of our specialty coffee as a one-off single run. 

Little did we know, there’d be such a demand for the resulting coffee, that we’d soon be welcoming it as a staple offering in our arsenal. We've learned a lot since Midnight Harvest first launched, and it's a really fascinating twist on the roasting process. Barrel-aged coffee is crafted by ageing green coffee beans in barrels previously used for spirits like whiskey or rum. This process allows the beans to absorb sweet flavours like vanilla and caramel, a touch of spice from the whiskey, as well as oak from the barrel, resulting in a rich and complex profile that is extremely different from traditional coffee.

No, whiskey barrel-aged coffee does not contain any alcohol. The beans are aged in empty barrels to absorb aroma and flavour notes, but no alcohol remains in the coffee, ensuring it is non-alcoholic.

The time-intensive process and craftsmanship of barrel-ageing coffee contribute to its higher cost. Our coffee beans spend two weeks in barrels, absorbing flavours that make each batch unique, reflecting on both the time and effort that has gone into it.

Barrel ageing enhances the coffee beans with smoky, woody and fruity undertones, depending on the type of barrel used. It complements the coffee’s natural flavours with subtle hints from the barrel, creating a rich and complex flavour profile, that is completely different from traditional coffees.

Midnight Harvest coffee features a bold, complex profile with tasting notes of apple brandy, nutmeg and chocolate. The barrel-ageing process adds a boozy warmth to the beans to the coffee beans, complementing the natural sweetness.

The beans in Midnight Harvest come from Fazenda Pinhal, a farm in Brazil, in which we have a very close relationship with Pedro Gabarra who manages the farm with his family. Brazilian coffee beans traditionally have a rich and chocolatey undertone, which has been enhanced by the barrel-ageing process.

Methods like cafetiere or cold brew are ideal for barrel-aged coffee, as they bring out its complex flavours and aromas. Cold brewing, in particular, can accentuate the nuanced notes, though traditional brewing methods, like cafetiere and AeroPress, work well too. Check out our brew guides below.
