Quebraditas Coffee Farm is a 18 hectare farm, 1600-1850 MASL, in Oporapa, Huila, Colombia.
We pick up strong notes of rose water, red berries and lime. A delicious example of what can be achieved with 'advanced processed' coffee.
Edinson's processing methods are detailed and exacting. The been are oxidised for 24 hours to remove the mucilage. They are then washed at 45°C to create a thermal shock. The pulp is then macerated to create a starter culture which is inoculated with Hybrid Saccharomyces cerevisiae x Saccharomyces bayanus yeast. The coffee is then fermented for 36 hours at below 25°C before being washed at 5°C, to seal the fermentation. Lastly, drying occurs for 76 hours at 40°C.
This Sidra Bourbon varietal has prominent floral notes and berry sweetness. These flavours are refined and enhanced by Edinson Argote's advanced processing techniques.

20g coffee, 360ml water. Total brew time = 3:00.
1:18 ratio, steeped for 4 minutes and left to settle. No plunger needed!
