Catarina is a beautifully balanced coffee with distinctive flavour notes of cola, maple syrup and cantaloupe. The natural sweetness from the maple syrup combines with the smooth, fruity essence of cantaloupe, while the cola notes add depth.

The coffee comes from Catarina Ramirez, a first-generation coffee farmer who lives with her children in Concepcion Huista, Huehuetenango. Catarina is involved in every aspect of her farm, which she started in 2013. Her dedication to the land is evident in the care she gives to the coffee plants, which she nurtures like the flowers around her home. Catarina is a member of the El Sendero cooperative, a group that focuses on gender equality and supporting young coffee producers in the region.

Concepción Huista, Huehuetenango

Catarina’s coffee is grown in the high-altitude region of Concepción Huista, nestled between 1560-1620 meters above sea level. With cool temperatures ranging from 12-39°C, this area provides the perfect climate for producing proper tasty coffee.

Smooth and Unique

Catarina offers a beautifully balanced cup with the natural sweetness of maple syrup, complemented by smooth cantaloupe and cola, creating a deep and unique flavour profile.

Washed

Cherries are de-pulped within about 5 hours of being picked and then left to dry ferment for 32 hours. This slow fermentation method is chosen due to the cool temperatures around Catarina's wet mill, which helps develop a clean and vibrant flavour profile. Once fermentation is complete, the coffee is washed to remove the mucilage from the parchment. The parchment coffee is then moved to the patio, where it is sun-dried for 7 hours each day for 6 days, with the coffee being turned every hour to ensure even drying.

El Sendero Cooperative

The producer of Catarina, Catarina Ramirez, is a member of the El Sendero cooperative, which plays a vital role in supporting coffee producers in the Concepción Huista region of Huehuetenango. Established in 2016, the cooperative is made up of 196 coffee producers, with 62 women and 134 men. El Sendero focuses on fostering gender equality and providing valuable resources and support, particularly for young coffee farmers. By empowering its members, the cooperative helps ensure sustainable farming practices and improves the livelihoods of its producers.
