During harvest season, ripe coffee cherries are picked by hand each day and transported to Agri Evolve's processing station at Nyabirongo. Cherries are floated and graded before being dried in the sun. Throughout the drying process, they're rotated multiple times daily to ensure even drying whilst allowing them to develop their full rich flavours.
Light intensity. Plenty of citrus and stone fruit flavours coming through with medium acidity.
