Millie Peacock - Service Manager

How did you get into coffee?

My dad and brother are massive coffee lovers, so coffee has always been a part of my life. Joining Rounton Coffee has been the perfect opportunity to dive deeper into coffee. Now, I'm on my own journey, learning more every day about the craft and complexity of coffee and enjoying the coffee we brew in the office.

What's the most interesting thing you've learned about coffee since you started working here?

One of the most fascinating things I've discovered is how much the roasting process can shape the final flavour. It's incredible to think that the conditions during roasting - like time, temperature and airflow - can be just as impactful as where and how the coffee is grown. It's a real art and science.

What is your favourite part of working at Rounton Coffee?

The atmosphere, the people around me in the Granary and learning something new every day.

What's your favourite spot in North Yorkshire to relax or have a coffee?

I love grabbing a takeout from Wilfred Deli and walking down by the falls in Richmond.

What is your proudest achievement in coffee?

I've just started here so I'm not sure yet… check back later!

If you were not working at Rounton Coffee, what would you be doing?

I would probably be trying to establish my art business. Art is my passion.

If you could change one thing in the coffee industry, what would that be?

The impacts of the climate crisis are increasing risks to farmers and their farms. Rising temperatures, unpredictable weather and shifting growing conditions are making it harder for farmers to produce quality coffee and sustain their livelihoods. It's a huge challenge, but also an opportunity for the industry to come together and support sustainable farming practices.

If you were a coffee blend, what would your flavour profile be?

Something with notes of coconut and vanilla, and not too bitter!

What do you do away from work?

I love spending time outdoors with my dog and socialising with friends.
