How did you first get into coffee?
Coffee's always been a big part of my life from a young age. My Dad is from Sicily and a Moka Pot in our household was a daily tradition. I then became more addicted to coffee and understanding a lot more about it when I first became a barista.
What is your favourite part about working in coffee?
The social aspect is something I always enjoy. I find it interesting how people brew at home and what methods they use.
What’s the most interesting thing you’ve learned about coffee since you started working here?
I love hearing about the different processing methods used in coffee. Particularly the co-ferments. I do also love the journey the green coffee has taken and which origin and farms it's come from.
What’s your favourite spot in North Yorkshire to relax or have a coffee?
I've not been in North Yorkshire for too long. I've lived in Leeds for a long time and I would recommend Galleria or Laynes for good food and coffee. In Northallerton I've spotted a nice kiosk place that we supply to called Bean and Bake, they have a great selection of breads and sweet treats.
How do you drink your coffee?
It often depends on my mood. Sometimes I enjoy an espresso if I need that instant boost. Other times I like a flat white, it's a nice balance of milk and espresso. I do also enjoy the V60 method, there's something rewarding about the process of perfecting the different ratios needed.
What is your favourite coffee origin, and why?
Ethiopia has always stood out to me. The fruity, honey like notes you often get from it and really enjoyable.
What is one thing you'd like to change about the coffee industry?
It's not all the time but there's certain aspects of the coffee industry that can be quite judgemental, for example if you didn't always know a certain process or brewing method. So I'd like less of that, coffee should be something everybody is welcome to no matter how much they know. No one should feel uncomfortable when starting out their journey into speciality coffee. If we can make the switch from people using cheap instant to ground fresh then that's always a massive step.
What do you like doing away from coffee?
In my spare time I enjoy Bouldering (Indoor Rock climbing). It's a great way of keeping active but having fun whilst doing it. I also collect vinyl records, and there's nothing I love more than drinking coffee in the morning and listening to a record.
